Fleur de Sel
The gourmet restaurant Le Cerf in Cossonay (VD) closed its doors on December 21, 2019, to make way for a new concept now run by restaurant manager and head sommelier François Gautier and chef Romain Dercile under the name "La Fleur de Sel."
Here you will discover carefully prepared dishes made with local produce, as well as vegetarian menus from Tuesday to Saturday.
In 1982, Carlo Crisci took over Le Cerf in Cossonay alongside his wife Christine. Thirty-seven years later, at the age of 63 and more than 20 years after receiving his second Michelin star, the Fribourg chef, renowned for his artistic and creative dishes, decided to reinvent himself and devote his time to other projects. He continues to work closely with the Bois-Cerf and Cecil clinics as a culinary consultant.
