On Labor Day, May 1, 2011, young chef Philippe Roschy took over the legendary Café du Boulevard in Fribourg. From the outset, this "man of the field", a true enthusiast of the culinary arts and local produce, has strived to subtly blend tradition and modernity. At the same time, this child of La Basse and bourgeois of the town has been actively involved for several years in the defense and promotion of his industry.
When the young proprietor, born in 1979, relaunched the establishment at number 39 boulevard de Pérolles, he gave it a new name - Brasserie Le Boulevard 39 - and somewhat rejuvenated its decoration and marketing, assisted by freelance graphic designer Rachel Roschy. Nevertheless, he makes a point of preserving the soul of the place. On the plate, brasserie dishes rub shoulders with the famous Entrecôte du Boulevard, served on the stove, and hamburgers with foie gras. Depending on the season, you can also enjoy mussels, game or a Bénichon menu. Know-how, quality and authenticity are the hallmarks of the cuisine offered by Philippe Roschy and his loyal team.
