Brülisauer Käse AG

The last traditional cheese dairy in the canton of Aargau is located in the village of Künten, between the two idyllic Reuss towns of Bremgarten and Mellingen.

When the Künten cheese cooperative was looking for a cheesemaker in 1985, Sepp Brülisauer from Rossrüti in St. Gallen took over the dairy despite the difficult circumstances at the time. The state stipulated which types of cheese had to be produced. The cheese dairies were not allowed to develop their own varieties.

Sepp Brülisauer did it anyway because he was convinced that consumers wanted regional cheese and that you are more successful with your own varieties. Ultimately, it was the recipe for success for the cheese dairy in Künten. After the Swiss cheese market was finally liberalized in 1995, he already had a head start over other cheese dairies.

 In the years that followed, Sepp Brülisauer and his wife Sibylle turned what was once a small Tilisiterkäserei  into a modern cheese dairy. They have repeatedly invested in modern infrastructure and continuously expanded the cheese warehouse.

25 specialties have been developed and produced over the years, including real bestsellers such as the "Urchrüter". Sepp's specialties enriched the Swiss cheese range with many a delicacy.

In April 2020, after 35 wonderful and intensive years, the business was handed over to a younger generation. In Fabian Spielhofer, Sepp and Sibylle Brülisauer have found a committed and competent successor who will continue to pursue their business philosophy and high quality standards.
