TURKISH SPICES – TURKISH CUISINE
Turkish spices in the kitchen
Constantinople, now known as Istanbul, is considered the gateway to the Orient and was a melting pot for people from all over the world. They brought with them their culinary specialties, which form the basis of today's Turkish cuisine. The blending of the culinary traditions of the Turkic peoples with Indian, Persian, Islamic Arab cuisine, and influences from the Mediterranean region have shaped and formed Turkish cuisine. Turkish cuisine is fresh, varied, often surprising in taste, as it also mixes savory with sweet components, and is very spicy.
Turkish cuisine uses countless types of vegetables: red, green, and yellow peppers, tomatoes, long thin or broad beans, broad beans, red beans, cucumbers, cabbage, lettuce, leeks, onions, garlic, and eggplant. Parsley, mint, lemons, arugula, and grape leaves complement the wide variety of vegetables. Olive trees provide fruity oil, which is used very liberally. As in all countries influenced by Islam, pork is taboo and considered unclean. Lamb, beef, goat, poultry, and fish are the preferred sources of protein and are used in countless delicious dishes. A wide variety of spices are used in Turkish cuisine: chili peppers, ground chili, cumin, black cumin, allspice, cinnamon, thyme, dill, fenugreek, garlic, parsley, mint, sesame, pul biber (coarse hot paprika), which are combined in various ways to create the rich aromas and diverse flavors of Turkish cuisine. Bulgur, couscous, rice, and sometimes potatoes are basic ingredients in Turkish cuisine and are refined with many spices. Meze are cold or warm appetizers that play an important role in Turkish menus and come in many varieties: stuffed grape leaves, hummus – a paste made from chickpeas and tahini (sesame paste), yogurt with cucumber, mint, pepper, olive oil, and lemon juice, to name but a few. They are usually served with bread. Turkish cuisine offers a variety of breads, often still baked in a stone oven and frequently sprinkled with black cumin or sesame seeds.
Lamb is often grilled or used as minced meat for a wide variety of main courses, accompanied by vegetables prepared in different ways. Sophisticated combinations can be found in rice dishes such as pilaf, a dish in which liver, onions, pine nuts, and sultanas are cooked together, seasoned with dill, cinnamon, and allspice.

Soy scented candles
Making candles: pressing, pouring, pulling
Candles can be made using three different methods. Industrially manufactured, straight candles are mainly pressed. To do this, powdered paraffin is filled into a sleeve and pressed together from both sides under high pressure. Alternatively, candles can also be poured. Liquid wax is poured into rubber molds and solidifies inside them. Pure stearin candles are only made using the casting method.
Simple, elongated candles in particular can also be manufactured using the pulling method: the wick is repeatedly dipped into liquid wax, which cools layer by layer.
How to burn candles safely
As beautiful as their light is, when candles are burning, you should always take a few precautions due to the risk of fire:
- Always place candles upright and never leave them burning unattended.
- Use a heat-resistant, non-flammable coaster.
- Keep the so-called burning bowl, i.e., the base, clean.
- Protect candles from drafts.
- Keep a sufficient distance from flammable objects such as curtains.
- A distance of at least ten centimeters between individual candles is also recommended.
Why do I believe that soy wax candles are better than paraffin candles?
1. They burn more cleanly
Unlike petroleum-based paraffin candles, soy wax candles do not contain any harmful substances, carcinogens, or environmentally hazardous substances. This also makes it much less likely that soy wax candles will trigger allergies.
2. Better scent
The scent of essential oils, such as those used in Ayra candles, unfolds very gently. This is because soy wax candles burn more slowly and therefore release their scent more slowly. This means there is no risk of the scent overwhelming you. The natural wax also retains its color better than other candles, keeping them looking beautiful and attractive for longer.
3. Better for the home
Unlike paraffin candles, soy wax candles do not leave black soot behind—soy wax simply burns cleaner than petroleum-based paraffin candles. The soot produced when paraffin candles burn can potentially leave dark stains in your home. Vegetable-based soy wax does not release such products in the first place and therefore cannot damage your beautiful furnishings.
4. Longer burning time
Soy wax burns cooler. In reality, this means that you can enjoy your soy wax candle for longer and use it significantly longer. Our Ayra candles have an approximate burn time of 45 hours, which is about 30% longer than a paraffin candle of the same size.
5. Natural ingredients
Natural wax is made from natural ingredients, which makes it biodegradable and easier to clean. Paraffin candles are made from petroleum, a non-renewable raw material that contains carcinogens and other harmful substances—practically the same kind of harmful substances that come out of our car exhaust.
