Sican chocolate is an Authentic Criollo (non-transgenic) that guarantees the harvesting of the bean right through to the production of the couverture on the lands of BátanGrande. Our desire is to preserve the ancestral know-how of the BátanGrande community, to fairly remunerate everyone involved in cocoa production and to recreate the region's original biodiversity by promoting cocoa cultivation.
.There are 30 farming families who reserve part of their plot for cocoa cultivation. At the same time, Juan Castillo has built a cocoa factory, including a fermentation, drying, roasting, pressing and conching area. The conching process gives the cocoa its aroma and the finesse it exudes in the mouth. Depending on the customer's requirements, the conching time can be extended up to 72 hours to obtain a Grand Cru chocolate with 10 micron finesse.
