Far from the mass market, he has forged genuine partnerships with farmers.
First, he selects the animals, then slaughters them with the utmost respect for the animal and hygiene standards.
For cattle, this involves proper maturation in a cold room. The aging time is respected, allowing the meat to develop all its aromas and flavors. For smoked cuts, an "old-fashioned" smokehouse is used with spruce chips and white fir sawdust.
Finally, it is 100% manual expertise, without any artificial additives.
