The CELLAR
Cabbio is home to the Cavallini family's vibrant winery. Two stone farmhouses have been refurbished to serve as wine-making cellars, where the cold winter weather allows the wines to be well clarified with frequent racking. In the simple cellar, Luciano and Grazia produce typical wines following BioSuisse guidelines and respecting the natural timing of winemaking processes. The use of sulfur dioxide (an antioxidant) is very limited. At the foot of the valley, the winery cultivates its vineyards whose grapes, harvested by hand, are vinified according to origin and reflect the characteristics of the soils on which they grow. The winery is a recognized winery and operates on a professional level. It vinifies only its own grapes and produces a full-bodied white wine (Sauvignon), a pure merlot (Vacallo, Morbio) and a mature wine (Pedrinate), an organic wine (Chambourcin) and two specialties (Arinarnoa and Nebbiolo). From the distillation of Merlot pomace is obtained Grappa, with which Grazia prepares Nocino. The winery is recognized at the cantonal level, is a member of the Swiss winegrowers-winemakers association, and is registered with the Ticino D.O.C. label, the WINEMARKING label and VITICOLTURA EROICA. In Luciano and Grazia's winery, one can sense the professionalism with which they approach their craft, but reassuring is the artisanal dimension in which the winery wants to remain, in order to take care of the entire production cycle, from grapes to wine, from bottling to direct sales. A care that guarantees the customer the origin, personality and authenticity of the products.
Visits to the vineyards and winery, tastings (even small groups) are always possible by appointment (www.cantinacavallini.com). In late May and late November, Grazia and Luciano open the cellar doors to the public to present new vintages and special vinifications (Merlot rosé, Americana grape red). The wines and grappa are sold at the winery, with no additional costs on the product for intermediaries, and in this way the practice of the zero-kilometer short supply chain is supported. The winery hosts young Swiss students (www.agriviva.ch) during the summer, offers Ticino middle schools a day of grape harvesting, from the row to the barrel (www.scuolainfattoria.ch) and employs civilians for the Swiss Civil Service (www.zivi.admin.ch and www.serviziocivile.ch ).
Cavallini Winery offers a tasting counter at trade markets and provides wines for cultural events, openings, press conferences, and regionally focused events. Cavallini wines can be drunk in Ticino in some restaurants, wine bars and grotti, but they are mostly enjoyed at home.
