Dairy
Yes, the products made in our cheese dairy come from our farmers, from our cows grazing on our healthy meadows. We ensure that the valuable raw material milk is refined into high-quality milk and cheese specialties. One hundred percent of the processed silage milk comes from the mountain region! A total of 2.7 million kilograms of milk are processed in our joint milk processing plant. Our milk suppliers guarantee our products and stand by our traditional values. They all work on established family farms with a strong and deep connection to animals, nature and Appenzell customs.
The milk that is processed into Urnäscher cheese comes 100% from the Appenzell region and is processed on site until it is ready for the market. The independent, unmistakable customs of the Urnäsch region in the Appenzell hinterland are still lived here in full and unadulterated.
Our horned cows
Only just under 20% of cows in Swiss agriculture are still horned. Here in Urnäsch, things are a little different. Practically all of our cows still have horns. Of the approximately 617 cows that produce milk for our cheese, only 5 cows are still hornless. Most of these dehorned cows are owned by a milk supplier from Hundwil, who only brings the milk to the cheese dairy every other day. It is therefore easy for us to produce a cheese from milk from horned cows - Urnäscher Hornkuhkäse.
