The Gumpesel is a "rustic" raw sausage with a distinct smoky flavour, which today is made exclusively from pork and beef and the large cubes of bacon give the sausage its distinctive structure. The large cubes of bacon give the sausage a pronounced texture Another characteristic feature is the particularly spicy taste. As the sausages remain in the smoke for quite a long time, their color and taste become very aromatic.
