Specialties

Our wood-fired bread is something very special. It is based on a pre-ferment, which is left to ferment overnight so that it can develop its full flavor. The dough is then made using a piece of this pre-ferment and pure spelt flour. Only flour from the region is used. Of course, this dough is also given plenty of time to rise. The bread is baked in our wood-fired oven, which gives it its wonderful crust and delicate wood-fired aroma.
 

Chocolat Yannick

Chocolat Yannick is a creation by Ruth and Urs Rössler. The exact recipe for this exquisite chocolate was determined in a complex process involving several test series. Cocoa beans from the best countries of origin were repeatedly mixed and tasted. The goal was to develop a pure, mild, dark chocolate with a subtle fruity note, moderate sweetness, and low acidity. These characteristics were found in a blend of cocoa beans from different origins, namely St. Domingo, Mexico, and Peru. The beans from St. Domingo and Mexico provide the pleasant cocoa note. The chocolate owes its aromatic and fruity flavor primarily to the beans from Peru.
