What is Pacific Rim Cuisine?
Hawaiian cuisine is characterized by its history. Even the Polynesian natives in Captain Cook's time used all kinds of fish, poultry, pork, potatoes and local vegetables.
The Europeans brought their own plants, cultivated tropical fruits on plantations and employed Chinese and Japanese as workers, who in turn introduced rice, sweet and sour sauces and Asian spices. Between 1880 and 1920, a native cuisine developed from this mixture of peoples, which held its own even when Hawaii became the 50th American state in 1959.
As chefs from all over the world worked in the large hotels in Hawaii, a competition developed over time between them to see who was best able to fuse the diverse types of fish, fruit and vegetables from the Hawaiian islands into a tasty composition using the grill, pan or wok and Southeast Asian spices and sauces.
The resulting PACIFIC RIM CUISINE has crowned the menus of restaurants in the South Pacific for two decades.
Busyless Business Lunch
Our guests can enjoy a selection from our evening menu at lunchtime, combined with weekly changing wok, grill, salad and sushi specials. Try a Filet Mignon Center Cut with homemade mashed potatoes, a Surf&Turf Asian Delight, a Da Kine Club Sandwich or one of our new burger creations. The Maori is open from Monday-Friday from 11:30-14:30 for our lunch guests.
Enjoyment at the Maori
In the evening we present our whole variety of Pacific Rim Cuisine. At Maori you can enjoy Polynesian pupus (starters), such as the pipikaula (homemade dried meat with pineapple mustard) or the Ahi Tatar Tiki Stack (spicy tuna tartare on a bed of avocado), to name just two. Crunchy salads such as the Moana Chicken Salad (with teryiaki chicken breast), fine Tataki's (raw fish in wasabi sea salt marinade) and Maori Sushi Rolls await you. From Hawaiian fusion cuisine, the Macadamia Chicken (with ginger raita and pesto linguine) will enchant you. Vegetarian dishes such as pancit (Filipino noodle dish) are also an integral part of Maori cuisine. The new grill, on which juicy pieces of meat such as Tomahawk Prime Beef (for 2 people) are prepared, is a treat for the taste buds. As a culinary finale, enjoy a Crème Brûlée à la Noix de Coco (specialty from Tahiti) or a fresh Pineapple Carpaccio with Lilikoi sorbet.
Maori Pacific Bar
Holiday cocktail creations are served at the bar: TIKI drinks such as the original Trader Vic's Mai Tai, or the Scorpion Bowl (for 4 pers.) are served in iconic tiki mugs . A selection of traditional cocktails and exquisite spirits also find their place at the Maori bar. Our wine list presents a selection of excellent wines from Europe and the New World, some of which are unknown.
