Chocolat Yannick

Chocolat Yannick is the creation of Ruth and Urs Rössler. The exact recipe for this exquisite chocolate was determined in an elaborate process involving several series of tests. Cocoa beans from the best countries of origin were repeatedly blended and tasted. The aim was to develop pure, mild, dark chocolate with a subtle fruity note, moderate sweetness and low acidity. These characteristics were found in a blend of cocoa beans from different origins, namely St. Domingo, Mexico and Peru. The beans from St. Domingo and Mexico provide the pleasant cocoa note. The chocolate owes its aromatic and fruity flavor mainly to the beans from Peru.
