Among the estates that benefited from his expertise are Château Pape Clément, La Tour Carnet, and Robert Mondavi’s estate in California. These international experiences allowed him to develop a deep mastery of different winemaking techniques. He is the only one to craft his wines according to a rigorous and traditional method, favoring micro-vinification and unique artisanal techniques. The Winemaking Process : • Grapes are hand-harvested and cooled before vinification to preserve their aromas. • Fermentation is carefully controlled, often in special tanks such as the spherical “Galiléo.” • Barrel aging, sometimes for more than two years, develops complex aromas and a silky texture. • No chemicals or modern techniques are used, ensuring purity and authenticity. The fact that they are open on Sundays is another major bonus for those looking for a delightful dining experience over the weekend. The menu offered a delightful selection of dishes, each one more mouthwatering than the last. I left the restaurant feeling satisfied and grateful for such a memorable dining experience. I highly recommend it to anyone looking for a good meal.

Un restaurant très original et une expérience exceptionnelle ! Nous avons visité ce lieu en groupe de 6 personnes et avons eu la chance d’être placés à une table ronde, nichée dans une petite alcôve du restaurant aménagée en cave à vin. Le cadre était tout simplement remarquable, tout comme la qualité des plats et leur présentation soignée. Mention spéciale à la carte des vins, qui propose de véritables trouvailles hors du commun et tout à fait abordable ! Le service, quant à lui, était à la fois chaleureux et très professionnel. Nous avons tous passé un moment magique. Une visite est à recommander sans hésitation. 5/5 largement mérité.

A chaque visite c’est une réussite, le repas est original avec des saveurs revisitées, le service est jeune et décontracté, aucune agressivité, tout coule de source, les patrons prennent la peine de saluer leurs convives, bon vent à toute l’équipe
