Seasonal specialties: Spring - Summer:
Marinated meats: guaranteed palm oil-free marinades
Jorat steak, lamb casings with garlic, exotic pork fillet, sweet and sour pork neck, peperoncino beef steak, herb-infused beef onglet, lemon/lime chicken fillet, spare ribs, honey-mustard duck fillet.
Skewers: quail thigh skewers, lemongrass chicken thigh skewers, mini chicken tender skewers (lemon pepper or sesame curry), shrimp tail skewers (black tiger), Moroccan lamb meatball skewers, mini bacon skewers.
Sausages: Duck roasting sausage (February to May), wild garlic sausage (May to September), pork chipo, rosemary bacon roasting twist, veal chipo, merguez, curry pork sausage (machach), bell pepper sausage.
Seasonal specialties: Autumn - Winter
Game meats: Wild boar roasting sausage with boletus (mid-September to end of January), venison terrine, homemade venison stew with spätzli.
From mid-September to end of November: Fresh venison haunch (Austria), fresh elk entrecôte (Austria), wild boar neck (France).
Homemade creations: Vol-au-vent stuffing, stuffed rabbit thigh, boletus-stuffed rabbit saddle, spinach-stuffed rabbit saddle, turkey gigot (boneless and stuffed), cabbage sausage, liver sausage, cream black pudding, duck roasting sausage (February to May), Madeira pork feet (cooked), Tournen sauerkraut with assorted meats.
