The vineyards of Domaine des Abeilles d'Or are part of the Choully and Peissy appellations d'origine contrôlée (AOC), which are themselves part of the Geneva AOC. The vineyard covers an area of 25 hectares. Choully is located in the heart of Switzerland's largest wine-growing commune: Satigny.
The Choully hillside stretches out in slopes of varying steepness above the village of Satigny.
The Domaine des Abeilles d'Or is cultivated in the purest tradition, using a low and narrow Guyot system with around 10,000 vines per hectare. The vines are grassed to combat erosion and curb the vigor of the vines. The estate is farmed using techniques designed to preserve the environment and is one of the first estates in Switzerland to practice integrated production (IP).
In the heart of Europe, Domaine des Abeilles d'Or cultivates around twenty grape varieties, which you can taste here:
- Chasselas, Pinot Blanc, Pinot Gris, Chardonnay, Viognier, Sauvignon, Kerner, Scheurebe, and Semillion for whites
- Gamay, Pinot Noir, Gamaret, Garanoir, Merlot, Malbec, Cabernet Franc, Cabernet Sauvignon, and Ancellota for reds
Gamay and Pinot Noir are also used to produce Gamay and Œil-de-Perdrix rosés.
Certain grape varieties are blended to produce:
- La Douceur d'Automne
- Le M2
- And our renowned Douce Noire
Le Baron Auriol blanc de blancs and Le Somnambulles (frizzanté) are two sparkling wines.
For lovers of digestifs, we distill Lie and Marc, which we leave to age for a minimum of 7 years in oak barrels.
Douce Noire and M2 are aged for at least 12 months in oak barrels before reaching their full aromatic potential.
The vinification of the Domaine des Abeilles d'Or wines is carefully carried out by Laurent Desbaillets, a graduate of the Changins School.
