Strict ripeness checks, hand-picking into small crates, and winemaking methods selected according to the characteristics of each harvest also contribute to enhancing the quality of our wines. Over the years, the association has consistently demonstrated its dynamism by refurbishing its premises, adapting to new winemaking methods and selecting the finest grape varieties. The cellar, the bottling hall and the installation of automatic presses are just some of these many developments. The AVO is changing its name to ‘Artisans Vignerons d’Ollon’ to reconnect with its origins, tradition and artisanal expertise (limited production), and to offer superior quality wine! Today, 125 members contribute all or part of their harvest to the association, which sells over 500,000 bottles a year. AVY (Artisans Vignerons d'Yvorne) is an innovative cooperative founded in 1902. Today, our team of ten professionals vinifies and sells the production of its120 members. We mainly produce wines for the Yvorne Chablais AOC appellation, vinifying the harvest from 55 hectares of vines out of a total production area of 160 hectares. Most of the vines are Chasselas, but we also grow a number of noble white and red grape varieties.
