THE CELLAR Visit and Tasting THE DOMAINE AND ITS WINE CELLAR – PLACES STEEPED IN HISTORY Our Domaine is located in Balavaud, a hamlet of the comune of Vétroz situated at the heart of the Valais and the Rhone Valley, famous for its warm, dry microclimate in the summer months. Our imposing wine cellar and other facilities for winemaking, aging and bottling greet visitors at the entrance to the village and are open for tour by appointment. A site of particular interest and well worth a detour is the ancient bicentennial vaulted cellar where our earliest vintages were pressed in 1896. Today this splendid hall steeped in history and emotion is entirely dedicated to the fascination of the world of wine. The cellar is equipped to accommodate groups of up to seventy and offers ideal conditions for wine-tasting in authentic traditional surroundings. Under normal weather conditions it maintains normal business hours in order to allow wine-loving visitors to stop and discover our wines with a leisurely tasting in a uniquely appropriate setting. Evening tastings are also possible on Fridays and Saturdays, and, by appointment, any day of the week. The commitment to quality is also one to wines of pronounced character, which means a voluntary limitation of yield per vine. We are constantly in search of innovative methods, of the true character of our terroirs, of forgotten varieties awaiting rediscovery. Each of our vineyard parcels receives regular, individual care, above all in the fall in order to fix the date of harvest, the pivotal moment for the future character of our wines. We also believe that the care of our vineyards must seek the highest quality grapes while also observing the greatest respect for the environment. For this reason we were among the pioneers in the introduction of integrated production fifteen years ago. This method guarantees the sustainable use of chemical intervention. Today we remain in the vanguard of viticultural practice in harmony with the environment such as planting grass between the rows of vines. For the last five years, we have likewise maintained three estates that are cultivated according to the norms of the label Bio Suisse.

The Festive ¹ At once traditional and a little daring, these wines exalt everyday pleasure and joy, especially during celebrations and rituals. The production of late-harvest and passerillé wines depends on the year and grape variety. AVY (Artisans Vignerons d'Yvorne) is an innovative cooperative founded in 1902. Today, our team of ten professionals vinifies and sells the production of its120 members. We mainly produce wines for the Yvorne Chablais AOC appellation, vinifying the harvest from 55 hectares of vines out of a total production area of 160 hectares. Most of the vines are Chasselas, but we also grow a number of noble white and red grape varieties.

Privileged location In the heart of Lavaux , Union Vinicole de Cully enjoys a privileged location at the crossroads of the Epesses and Villette appellations. The three-storey cellar building is located at "Les Colombaires-Dessous", west of Cully, between the SBB station and the Route de la Corniche. The winery Union Vinicole de Cully is a cooperative winery, i.e. an association of independent winegrower-owners who have joined forces to ensure that their harvest is vinified and marketed under the best possible conditions. Founded in 1937, the winery currently has 37 members, including 5 principal winegrowers. Our team is made up of 10 people, divided between the cellar and sales, with Martin Morgenthaler as current manager and Mr. Bernau as cellar oenologist. Espace Vinilingus Our Vinilingus rental space is available for private and business events. From November to the end of January, it is complemented by our Yurt. The family estate The estate is about 9 hectares and consists of vines that are both owned and rented out, under the appellations “Perroy”, “Mont sur Rolle” and “Féchy”. The “chasselas” is in the majority (60%), growing alongside numerous specialities such as “sauvignon blanc”, “pinot gris”, “viognier”, “cabernet sauvignon” and “merlot”. In our cellars you can find this diversity in fourteen different vintages. Harvesting is done by hand in order to guarantee quality work. The wine, from the producer to the consumer, is a guarantee of its origin and authenticity. Situated in the vineyards of La Côte in Saint-Prex, a magnificent medieval village. Our estate overlooks Lake Geneva and the Alps. A south-facing hillside benefits from generous sunshine, rich soil and a great deal of passion. You'll receive a warm welcome from the Bugnon family. We have been cultivating the estate since the 4th generation. In 2023, we celebrated the 70th anniversary of our move from the old village of Saint-Prex to Bon-Boccard. Over the years, the estate has grown, and we now cultivate 8.3 hectares of vines. The grape varieties grown are Chasselas, Doral, Chardonnay, Gamay, Pinot Noir, Gamaret, Garanoir and Merlot. Our work is part of a constant quest for excellence, combining respect for the vines with the preservation of the winemaking traditions that have shaped our estate. Respect for the vines is at the heart of our approach. Each machine is operated with care, taking care not to disturb the natural balance of our terroir. We use methods that respect the environment, minimising our ecological footprint and preserving the biodiversity of our estate.
